Mix marinade in medium bowl
1tbs coconut milk
1tbs brown sugar
2tbs Low salt soy sauce
2 cloves garlic - chopped
1 lemon - juiced
Another bowl
1/4 c natty peanut butter
1 lemon juiced
1/4 tsp red pepper flakes . More the spicer of course
1tbs hot curry paste
3tbs low salt soy sauce
1tbs coconut milk
1/2- 3/4 c water
Set aside.
16oz chickenbreast no bone no skin. Diced into 3/4 " cubes
1tbs peanut oil
2 c carrots
1 onion ,sliced
1 c mushroom , sliced
1 c broccoli
1c sugar snap peas
1 red pepper , sliced
Prepare marinade placing all in glass dish. Toss chicken into marinade and let sit one hour minimum. I did all night
Prepare the sauce in small saucepan put on cooktop low heat to warm.
Place chicken in flat pan with peanut oil ,,stir fry till almost completely cooked. Remove chicken from pan set aside.
With pan still hot add onions carrots and stir fry 2-3 minutes
Add schrooms and other veggies ,cook 3-4 min
Add chicken and sauce back into pan cook till hot 2-3 minutes
Makes 6 - 2 cup servings
