Easy, Low-fat, Low-carb, & high-vitamin

Minutes to Prepare: 10

Ingredients

2 lbs fresh Cod
1 T Butter, unsalted
3 medium Roma Tomatoes
1/2 orange (Including peel)
1/4 Lemon (Including peel)
1 Med. Green Bell Pepper
2 cups dry White Wine
1 T black pepper
1/2 pound fresh Spinach

Directions

Grease bottom of large baking pan with butter, and lay cod filets on top.

Chop tomatoes, 1/2 orange (including peel), 14/lemon (including peel), and bell pepper in a food processor. Spread over cod. Add wine and black pepper. Bake uncovered in 400 degree oven 15 minutes or until cod is cooked through.

Layer cod and veggie sauce on top of bed of spinach. Use any remaining liquid/fruit mix from the pan as your 'salad dressing' on the spinach.

We have fish four nights a week...we go through it like crazy, and we eat about 4 pounds (two of us) at a sitting....!
