This is a good offseason meal that provides a lot of protein and a good flavorful sauce that doesn’t contain much fat. This just kinda pulls you away from the norm of grilled chicken.

First off lets start with the chicken breasts. You will need two. These will make 2 servings. You can serve your honey one, and be a pig and eat it all at the same time, or of course save it for later. Cut them in half lengthwise, then cover them with a piece of plastic wrap. Lightly pound the breast’s out to even thickness. Salt and pepper them and dredge them in flour, just enough to coat.

Now lets heat them thar titties up. Oh yeah, we fixin to make their nipples hard. Heat your pan over medium high heat. Add in a tablespoon or so of olive oil. Cook for about 2 minutes per side. You want a nice brown crust. Don’t worry about shit stuck to the bottom of the pan. You want those greatful bits of flavor in the end for your sauce. Ok remove the chicken and set them aside.

Now pour in the hot pan1/4 cup of vodka. This should deglaze the pan. Scrap up any stuck bits on the bottom. Cook until the vodka is nearly gone. Now add 1/2 cup of low sodium chicken broth and 2 tbsp of lemon juice. Now put the chicken back in the pan and let them simmer in the sauce for about 4 minutes on medium heat. Set the chicken aside again.

Now add in 1/2 cup of chopped tomatoes and 2 tbsp of heavy cream (10g of fat total). Heat the mater’s and cream. Now pour the sauce all over the chicken cutlets and scatter some green onions over the top. Eat with pasta, rice, or mop up the sauce with a nice piece of crusty bread.
